followed by maturation in 60-hectolitre

long and complex aftertaste
Onannon Mornington Peninsula Chardonnay 2024 dolcetto-dalba The story began in 1962Fruit is sourced from two sites on the Mornington Peninsula Tuerong and Red Hill. Whole bunch pressed, settled overnight and then racked to barrel taking solids. A Combination of yeasts were used to help build some complexity. 20% MLF. 15% new French Oak. 10 months in the barrel.
